Kauri is one of those rare finds on social media. Under the name: @i_stayfit, she classes herself as non ‘foodie’, but her desserts and recipes look as though they have come from the dining room table of the beast’s during the musical ‘Be our guest’. Her latest creation is this purple sweet potato, coconut and passion fruit pudding.
Having never had any health or weight problems, her ethos is in eating real and clean food. She believes in sourcing local produce, eating fresh, and is on a mission to prove that eating healthy doesn’t have to be boring. She has lived all around the world; from being born in Bangkok, living in Australia, Indonesia, the USA and now back in Thailand.
Purple Sweet Potato, Coconut and Passion Fruit Pudding
1/4 c purple sweet potato, cooked and pureed
1 c coconut milk
2 tbs coconut sugar
1 tsp agar agar powder
1 passion fruit
A pinch of salt
For the Sweet Potato layer:
Mix together purple sweet potato purée, 1/2 tsp agar agar powder and half of coconut milk in a small sauce pan until well blended.
Put the coconut mixture on low heat, stir constantly until it’s boiled. The mixture will have similar consistency to pouring custard.
Remove from heat and pour it onto a glass. Leave it to cool to room temperature. It will set without having to be refrigerated.
For Passion fruit coconut layer:
Mix the other half of coconut milk with the remaining 1/2 tsp of agar agar powder and passion fruit pulp.
Put on low heat and stir constantly till boiled and remove from heat. Pour it on top of the sweet potato layer that has already been set. Leave to cool and set. This can be served as-is but it is more enjoyable when it’s been chilled in the fridge.
